I graduated from The College of Charleston in 1998 with a degree in elementary education. Soon after, I moved to Jackson, Wyoming and began working in education. During the summers, I had the amazing opportunity of working on an organic farm as part of a work share program. I learned the importance of organic produce, supporting local farmers, and growing food with love while nurturing the land.
From this experience my philosophy of food was born. When food is whole, fresh, and eaten in harmony with the seasons, meals will naturally be balanced and more importantly, delicious!
In 2004, I quit my job and left Jackson to pursue a dream. I attended classes at The Natural Gourmet Institute for Food and Health in New York City and The Natural Epicurean Academy of Culinary Arts in Austin, Texas. In addition, I was awarded a scholarship through Women Chefs and Restauranteurs which allowed me the opportunity to complete an internship at Restaurant Nora in Washington, D.C. while simultaneously helping with local farmers markets and working on an organic farm in Maryland.
Over the years, I have poured over various cookbooks and health publications to glean all that I can about food and its powerful healing properties. My knowledge of food and nutrition has grown with help from those books, other chefs, classes, and lots of practice. What I learned has inspired me to experiment with all types of recipes and a variety of eating styles. I love the simplicity of cooking with fresh fruits and vegetables, hearty grains, beans and local meats. I have discovered that good food helps us feel better, maintain a connection to the land, and creates longevity and well-being. When ingredients are fresh and meals are created with love, we live longer and happier lives.
Although I find pleasure in reading cookbooks or preparing a wonderful meal, I realize that not everyone shares my passion or can find the time. But, it is still important to eat well and share a meal with loved ones. So, Green Bean Cuisine was born: a personal chef service creating balanced organic meals. I am bringing my passion for fresh, healthy food to you.
